there’s a brilliant BBC news article on the BBC news website which goes with this (and a much better video too with a comment from Banksy as to why he did it, he saw someone walking a dog wearing a diamante collar past a homeless person and never quite recovered from it, and wanted to challange how we treat some animals really well and others not so, and make some into food)
